Will DDR memory work in slots meant for DDR Dual Channel memory?

Right now im using Patriot 1024 mb DDR dual channel memory (x2 512 mb) and i was thinking of upgrading. But dual channel is sooooo expensive. Will it work i put ONE DDR stick in by itself into the dual channel slots? And would putting TWO identical DDR sticks instead of dual channel sticks work just as well as dual channel?

You can order on line and although they are not the cheapest it is worth paying for good ram.
